Instructions
- 1. Bring a large pot of water to a boil, add a generous pinch of salt, and cook the penne pasta until al dente according to the package instructions. Drain and set aside.
- 2. In a large pan, heat the olive oil over medium heat. Add cumin seeds and asafoetida, stirring until fragrant.
- 3. Add the canned chopped tomatoes to the pan, followed by turmeric powder, red chili powder, and a pinch of salt. Cook for 8-10 minutes, stirring occasionally, until the tomatoes soften and the oil begins to separate.
