- 2.27L / 4 Pints British Whole Milk 2.27L / 4 Pints
- 450G Heera Jaggery Unrefined 450g
- 200G East End Desiccated Coconut
- 450G Glutinous Rice Flour, 450G
- - Whole Foods Market Organic Cardamom Powder
- 1 Kg White Granulated Sugar
Instructions
- 1. In a large bowl, mix together 1 cup of glutinous rice flour, 1/4 cup of white sugar, and 2 cups of milk until you get a smooth batter. This will be used for the crepes.
- 2. In a pan over medium heat, melt a small amount of jaggery (about 1/2 cup) along with 1-2 tablespoons of water to form a syrup.
- 3. Add the desiccated coconut to the jaggery syrup and stir well. Cook for a few minutes until the mixture thickens, then add a pinch of cardamom powder for flavor. Set aside to cool.
- 4. Heat a non-stick pan over medium heat and lightly grease it. Pour a small amount of the batter into the pan and spread it thin to form a crepe.
- 5. Cook the crepe for about 1-2 minutes on each side until golden brown. Remove from heat.
- 6. Place a spoonful of the coconut filling in the center of each crepe and roll it up like a cigar.
- 7. Repeat steps 4 to 6 for the remaining batter and filling.
