Instructions
- 1. Preheat your oven to 200°C (400°F). Prepare three bowls: one with plain flour, one with beaten eggs, and one with a mixture of breadcrumbs and 50g grated Parmesan cheese.
- 2. Season the chicken breasts with salt and pepper. Coat each breast first in flour, then dip into the beaten eggs, and finally coat thoroughly in the breadcrumb-Parmesan mixture.
- 3. Heat 2 tablespoons of olive oil in a skillet over medium heat. Fry the breaded chicken breasts for 2-3 minutes on each side until golden brown. Transfer them to a baking tray.
- 4. In the same skillet, combine the tomato passata, oregano, basil, chili flakes, and a pinch of salt. Simmer for 5-7 minutes until the sauce thickens slightly.
- 5. Pour the tomato sauce over the chicken breasts in the baking tray. Sprinkle shredded mozzarella and the remaining grated Parmesan evenly over the top.
- 6. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly, and the chicken is cooked through (internal temperature of 75°C or 165°F).
- 7. Garnish with fresh parsley if desired, and serve hot with a side salad or crusty bread.
