Instructions

  1. 1. Preheat your oven to 200°C (400°F). Prepare three bowls: one with plain flour, one with beaten eggs, and one with a mixture of breadcrumbs and 50g grated Parmesan cheese.
  2. 2. Season the chicken breasts with salt and pepper. Coat each breast first in flour, then dip into the beaten eggs, and finally coat thoroughly in the breadcrumb-Parmesan mixture.
  3. 3. Heat 2 tablespoons of olive oil in a skillet over medium heat. Fry the breaded chicken breasts for 2-3 minutes on each side until golden brown. Transfer them to a baking tray.
  4. 4. In the same skillet, combine the tomato passata, oregano, basil, chili flakes, and a pinch of salt. Simmer for 5-7 minutes until the sauce thickens slightly.
  5. 5. Pour the tomato sauce over the chicken breasts in the baking tray. Sprinkle shredded mozzarella and the remaining grated Parmesan evenly over the top.
