- 300G Picard Msc Scallops With Tomato & Rosemary
- 100 G Jumbo Garlic 100g
- 6 Per Pack Morecambe Bay Oysters 65
- 2 Per Pack Natoora White Onions
- 220 Ml The Coconut Collab Plant-Based Double Cream
- 450G Bertolli Olive Oil Light Spread
- 200G Anchor Unsalted Butter
- 750 G Top-Op Table Salt Drums
- - Greenfields Ground White Pepper
Instructions
- 1. Shuck the oysters, reserving the liquid in a bowl, and set both the oysters and the liquid aside.
- 2. Pat the scallops dry with paper towels and season them on both sides with salt and Greenfields Ground White Pepper.
- 3. Heat a large skillet over medium-high heat and melt a portion of the unsalted butter. Add the scallops to the skillet and sear for 2-3 minutes on each side until golden brown. Remove the scallops from the skillet and set aside.
- 4. In the same skillet, add more unsalted butter if needed, then add the finely chopped garlic and white onions. Sauté over medium heat until the onions are translucent and the garlic is fragrant.
- 5. Pour in the reserved oyster liquid and let it simmer for 1-2 minutes, stirring occasionally to combine the flavors.
- 6. Add the plant-based double cream to the skillet and stir well. Let the sauce simmer gently until it thickens to your desired consistency, stirring occasionally to prevent sticking.
- 7. Return the seared scallops to the skillet, then add the shucked oysters. Cook for another 2-3 minutes, stirring gently, until the oysters are heated through and the scallops are warmed.
- 8. Taste the sauce and adjust the seasoning with additional salt and Greenfields Ground White Pepper, if needed.
- 9. Stir in fresh herbs (optional) and a squeeze of lemon juice to brighten the flavors. Serve the oyster scallops hot, garnished with additional fresh herbs if desired, and accompanied by a side of your choice, such as crusty bread or a light salad.
