  • - Petti Delicato Extra Fine Passata
  • 100 G East End Ground Coriander
  • 400 g Trs Turmeric Powder 400G
  • 50 G Vandevi Asafoetida 50g
  • 100 G Trs Ground Cumin Jeera Powder
  • 100G Trs Chilli Powder 100G
  • NaN Bute Island Cheddar Flavour Block
  • 1 Ltr Ktc Sunflower Oil
  • - Budgen Mission 6 Tortillas Plain 368G
  • 100G Tata Sampann Garam Masala Tata Sampann Garam Masala, 45g

Instructions

  1. 1. Heat 2 tablespoons of vegetable oil in a large pan over medium heat. Add the hing (asafoetida) and cook for 30 seconds to release its aroma.
  2. 2. Add the diced bell pepper and sauté for 2-3 minutes until slightly softened. Stir in the cumin powder, coriander powder, turmeric powder, red chili powder, and garam masala, cooking for another minute.
  3. 3. Add the tomato puree and salt to the pan. Cook the mixture for 5-7 minutes until it thickens and the spices are well incorporated.
  4. 4. Add the shrimp to the pan and cook for 3-5 minutes, stirring occasionally, until they turn pink and are fully cooked. Remove from heat and stir in the lemon juice and chopped cilantro.
  5. 5. Place a tortilla in a clean, dry pan over medium heat. Spread a portion of the shrimp mixture onto one half of the tortilla and sprinkle with grated cheddar cheese.
  6. 6. Fold the tortilla in half, pressing gently, and cook for 2-3 minutes on each side until the tortilla is crispy and the cheese has melted. Repeat with the remaining tortillas and shrimp mixture.
  7. 7. Cut the tortilla melts into wedges and serve warm. Garnish with extra cilantro if desired.
