Ingredients

  • 1 Kg Tomatoes 1kg
  • - Schwartz Coriander Leaf Jar
  • 65G Natoora Root Ginger
  • 300G Shana Okra Sliced Rings
  • 100 G Saras Turmeric Haldi Powder
  • 100 G Trs Ground Cumin Jeera Powder
  • 1 L Crisp N Dry Oil
  • 750 G Top-Op Table Salt Drums

Instructions

  1. 1. Wash 250g of sliced okra rings thoroughly under running water, trim the ends if needed, and set aside.
  2. 2. Heat 2 tablespoons of cooking oil in a large pan over medium heat.
  3. 3. Add 1 finely chopped onion and sauté until translucent, about 3-4 minutes.
  4. 4. Add 1 teaspoon of onion powder and 1 teaspoon of grated ginger, and cook for another 1-2 minutes until fragrant.
  5. 5. Stir in 1 teaspoon of ground cumin, 1 teaspoon of seasoning for sour soup with beef, and 1/2 teaspoon of turmeric powder, and cook for 1 minute to release the spices' aroma.
  6. 6. Add 400g of chopped tomatoes (fresh or canned) and mix well, cooking for about 5 minutes until the tomatoes soften and release their juices.
  7. 7. Add the sliced okra to the pan, season with salt and ground white pepper to taste, and stir to combine.
  8. 8. Pour in 200ml of vegetable stock, bring to a simmer, then reduce the heat to low, cover, and cook for 15-20 minutes until the okra is tender.
  9. 9. Taste and adjust seasoning if needed. If the stew is too thick, add a splash of water to reach your desired consistency.
  10. 10. Garnish with freshly chopped coriander leaves and serve hot with rice or bread.
