- 1 Kg Tomatoes 1kg
- - Schwartz Coriander Leaf Jar
- 65G Natoora Root Ginger
- 300G Shana Okra Sliced Rings
- 100 G Saras Turmeric Haldi Powder
- 100 G Trs Ground Cumin Jeera Powder
- 1 L Crisp N Dry Oil
- 750 G Top-Op Table Salt Drums
Instructions
- 1. Wash 250g of sliced okra rings thoroughly under running water, trim the ends if needed, and set aside.
- 2. Heat 2 tablespoons of cooking oil in a large pan over medium heat.
- 3. Add 1 finely chopped onion and sauté until translucent, about 3-4 minutes.
- 4. Add 1 teaspoon of onion powder and 1 teaspoon of grated ginger, and cook for another 1-2 minutes until fragrant.
- 5. Stir in 1 teaspoon of ground cumin, 1 teaspoon of seasoning for sour soup with beef, and 1/2 teaspoon of turmeric powder, and cook for 1 minute to release the spices' aroma.
- 6. Add 400g of chopped tomatoes (fresh or canned) and mix well, cooking for about 5 minutes until the tomatoes soften and release their juices.
- 7. Add the sliced okra to the pan, season with salt and ground white pepper to taste, and stir to combine.
- 8. Pour in 200ml of vegetable stock, bring to a simmer, then reduce the heat to low, cover, and cook for 15-20 minutes until the okra is tender.
- 9. Taste and adjust seasoning if needed. If the stew is too thick, add a splash of water to reach your desired consistency.
- 10. Garnish with freshly chopped coriander leaves and serve hot with rice or bread.
