- 100 G Jumbo Garlic 100g
- 3 X 400G Garofalo Chopped Italian Tomatoes
- 60G Terre Exotique Cheeselovers Pepper, 60G
- - Potts Vegetable Stock Can
- 20G Terre Exotique Green Salty Coastal Pepper, 20G
- 25G Fillippone Italian Organic Bay Leaves, 25G
- - Tata Salt
Instructions
- 1. Preheat your oven to 375°F (190°C).
- 2. Rinse the haddock fillets and pat them dry. Cut them into 1 1/2-inch pieces and set aside.
- 3. In a large oven-safe dish, layer the diced potatoes, chopped green peppers, and sliced onions.
- 4. Mince the garlic and sprinkle it over the vegetables along with the thyme, bay leaf, salt, and pepper.
- 5. Add the chopped tomatoes on top of the vegetable mixture, then pour the vegetable stock evenly over the dish.
- 6. Place the haddock pieces on top of the vegetables, ensuring they are evenly distributed.
- 7. Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes, or until the potatoes are tender and the haddock is cooked through.
- 8. Remove the foil for the last 10 minutes of baking to allow the top to lightly brown. Serve hot with crusty bread to soak up the flavorful juices.
