Ingredients
- 470 G Dabur Organic Ghee
- - Doves Farm Organic Chickpea Flour
- 1 Kg Trade Aid Caster Sugar 1kg
- - Natco Cardamom Powder
- 1 Kg Glucose Syrup, 1Kg
Instructions
- 1. Prepare your workspace by measuring out all the ingredients: 1 cup of Doves Farm Organic Chickpea Flour, 1 cup of Dabur Organic Ghee, 1 cup of Trade Aid Caster Sugar, and 1/4 teaspoon of Natco Cardamom Powder.
- 2. Grease a square or rectangular tray with a small amount of ghee and set it aside. This will be used to set the Mysore Pak once cooked.
- 3. In a heavy-bottomed pan, dry roast the Doves Farm Organic Chickpea Flour on low heat for 5-7 minutes until it releases a nutty aroma. Stir continuously to prevent burning. Once roasted, set it aside.
- 4. In the same pan, add the Trade Aid Caster Sugar and 1/2 cup of water. Heat the mixture on medium heat, stirring continuously, until the sugar dissolves completely and forms a one-string consistency syrup. To test this, take a small drop of the syrup between your thumb and forefinger and gently pull apart; it should form a single thread.
- 5. Lower the heat and gradually add the roasted chickpea flour to the sugar syrup, stirring continuously to avoid lumps. Ensure the flour is fully incorporated into the syrup.
- 6. Begin adding the Dabur Organic Ghee to the mixture in small batches, stirring continuously. Allow each batch of ghee to be absorbed before adding the next. Continue this process until all the ghee is incorporated, and the mixture starts to leave the sides of the pan.
- 7. Once the mixture thickens and becomes glossy, add the Natco Cardamom Powder and mix well to evenly distribute the flavor.
- 8. Quickly pour the hot mixture into the greased tray and spread it evenly using a spatula. Be careful as the mixture will be very hot.
- 9. Allow the Mysore Pak to cool slightly for 10-15 minutes, then cut it into desired shapes (squares or rectangles) while it is still warm.
- 10. Let the Mysore Pak cool completely before removing the pieces from the tray. Serve and enjoy your homemade Mysore Pak!
