  • 470 G Dabur Organic Ghee
  • 227G Arm & Hammer Baking Soda, 227G
  • - Doves Farm Organic Chickpea Flour
  • 1 Kg Tate & Lyle Granulated Sugar
  • 500 Ml Groundnut Oil 500ml
  • - Whole Foods Market Organic Cardamom Powder

Instructions

  1. 1. In a mixing bowl, combine Doves Farm Organic Chickpea Flour with a pinch of food-grade baking soda (not included in the ingredient list, but required for the recipe). Gradually add water to form a smooth batter with a pouring consistency.
  2. 2. Heat Groundnut Oil in a deep frying pan over medium heat. Once the oil is hot, use a perforated ladle to drop small droplets of the batter into the oil, forming tiny boondi. Fry until golden and crisp, then remove and drain on paper towels.
  3. 3. In a separate saucepan, dissolve Tate & Lyle Granulated Sugar in water over medium heat to create a sugar syrup. Add Whole Foods Market Organic Cardamom Powder to the syrup for flavor and simmer until it reaches a one-string consistency.
