Ingredients
- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- 100 G Jumbo Garlic 100g
- - Biona Organic Whole Cherry Tomatoes
- 50G Pepper Black Ground BWFO
- 500G Natco Mung Beans, 500G
- NaN Tilda Long Grain Rice
- 1 L Crisp N Dry Oil
- 500 Ml Haday Seafood Flavoured Soy Sauce, 500Ml
Instructions
- 1. Rinse 1 cup of chick peas thoroughly under cold water until the water runs clear.
- 2. In a medium pot, combine the rinsed chick peas with 3 cups of water. Bring to a boil over high heat.
- 3. Once boiling, reduce the heat to low, cover the pot, and let the chick peas simmer for 30-40 minutes or until they are soft and fully cooked. Stir occasionally to prevent sticking.
- 4. While the chick peas are cooking, heat 2 tablespoons of vegetable oil in a separate pan over medium heat.
- 5. Add 3 cloves of minced garlic and 1 medium-sized chopped onion to the pan. Sauté until the onions are translucent and the garlic is fragrant, about 3-4 minutes.
- 6. Add 2 medium-sized chopped tomatoes to the pan. Cook until the tomatoes are soft and have released their juices, about 5 minutes.
- 7. Stir in 1 cup of chopped baby watercress & little leaves. Cook for another 2-3 minutes until the greens are wilted.
- 8. Once the chick peas are fully cooked, add the sautéed vegetable mixture to the pot with the chick peas. Stir well to combine.
- 9. Season the mixture with 1 tablespoon of seafood flavoured soy sauce and 1/2 teaspoon of ground black pepper. Adjust the seasoning to taste.
- 10. Let the mixture simmer for an additional 5-10 minutes to allow the flavors to meld together.
- 11. Serve hot with steamed rice.
