- 400G Daucy Potatoes 400G
- 1 L Ktc Sunflower Oil
- - Schwartz Garlic Powder 480g
- 750 G Top-Op Table Salt Drums
Instructions
- 1. Preheat your oven to 220°C (428°F) and line a baking tray with parchment paper.
- 2. Wash and cut the potatoes into wedges.
- 3. In a large bowl, mix 1/2 teaspoon of asafoetida, 1 teaspoon of chat masala, 1 teaspoon of fajita seasoning mix, 1 teaspoon of garlic powder, 1 teaspoon of oregano, 1 teaspoon of paprika, 1 teaspoon of red chilli flakes, and a pinch of salt.
- 4. Add 3 tablespoons of corn flour and 2 tablespoons of tamale flour to the spice mix and combine well.
- 5. Toss the potato wedges in the spice and flour mixture until they are well-coated.
- 6. Drizzle 2 tablespoons of cooking oil over the coated potato wedges and mix gently.
- 7. Spread the potato wedges evenly onto the prepared baking tray.
- 8. Bake in the preheated oven for 25-30 minutes or until they are golden brown and crispy, turning them halfway through.
- 9. While potatoes are baking, prepare the dipping sauce by mixing 3 tablespoons of mayonnaise and 2 tablespoons of tomato sauce. Add a squeeze of lemon juice and mix until smooth.
- 10. Once the wedges are cooked, remove from the oven and sprinkle with freshly chopped spring onions.
- 11. Serve the potato wedges hot with the dipping sauce on the side.
