Ingredients

  • 1 Kg Glutinous Sticky Rice, 1Kg
  • 400 Ml Ktc Coconut Milk 400Ml
  • 250G Fresh Green Raw Mangoes 250G
  • 1 Kg Tate & Lyle Granulated Sugar
  • 750 G Top-Op Table Salt Drums

Instructions

  1. Rinse the glutinous sticky rice thoroughly under cold water until the water runs clear. Soak the rice in water for at least 4-6 hours or overnight for best results.
  2. Drain the soaked sticky rice and steam it using a steamer or a heatproof bowl placed in a pot with boiling water. Steam for 20-25 minutes, or until the rice is tender and fully cooked.
  3. While the rice is steaming, prepare the coconut milk sauce. In a saucepan, combine the coconut milk, 3 tablespoons of granulated sugar, and a pinch of salt. Heat the mixture over medium heat, stirring occasionally, until the sugar dissolves completely. Do not let it boil.
  4. Once the sticky rice is cooked, transfer it to a large mixing bowl. Gradually pour the warm coconut milk sauce over the rice, mixing gently to ensure the rice absorbs the sauce evenly. Cover the bowl and let it sit for 20-30 minutes to allow the flavors to meld.
  5. While the rice is resting, prepare the mangoes. Peel and slice the fresh green raw mangoes into thin strips or cubes. If desired, you can also use mango pulp as a topping or drizzle for added sweetness and flavor.
  6. For an optional snack or garnish, prepare the popping corn. Heat a small amount of oil in a pot over medium heat, add the popping corn, and cover with a lid. Shake the pot occasionally until the popping slows down. Season with a pinch of salt if desired.
  7. To assemble the dish, plate a portion of the sticky rice on a serving dish. Arrange the fresh mango slices on the side and drizzle with mango pulp if desired. Optionally, serve with a small bowl of the prepared popcorn as a side snack.
  8. Serve the Mango Thai Sticky Rice warm or at room temperature and enjoy this traditional Thai dessert!
