  • 100 G Jumbo Garlic 100g
  • 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
  • 50G Pepper Black Ground BWFO
  • 6 Each Golden Yolk Eggs 6 Pack
  • 653G Mccain Baby Hasselback Potatoes Salt & Pepper
  • - Mccormick Cumin Powder
  • 100G Rajah Spices Ground Paprika Powder
  • 100 G Saras Turmeric Haldi Powder
  • 750 G Top-Op Table Salt Drums
  • 1 L Crisp N Dry Oil
  • 1.5 Kg Best In Plain Flour 1.5 Kg

Instructions

  1. 1. Peel and boil the Baby Hasselback Potatoes Salt & Pepper in salted water until tender, about 15-20 minutes. Drain the potatoes and let them cool slightly before mashing them in a large bowl until smooth.
  2. 2. Add the minced garlic, finely chopped onion, chopped parsley, cumin powder, ground paprika powder, turmeric powder, salt, and black pepper to the mashed potatoes. Mix thoroughly to combine all the ingredients into a uniform mixture.
  3. 3. Beat the eggs in a shallow bowl. Form the potato mixture into small patties or balls, about the size of a golf ball. Flatten them slightly to create fritters. Dip each fritter into the beaten eggs, ensuring they are evenly coated, and then lightly coat them with plain flour.
  4. 4. Heat cooking oil in a frying pan over medium heat (approximately 180°C or 350°F). Fry the fritters in batches for about 2-3 minutes on each side, or until they are golden and crispy. Avoid overcrowding the pan to ensure even cooking.
  5. 5. Remove the fritters from the oil using a slotted spoon and place them on paper towels to drain excess oil.
  6. 6. Serve the maakouda hot with a side of harissa or your favorite dipping sauce. They can be enjoyed on their own or as part of a larger meal.
