Ingredients
- 2.27L / 4 Pints British Whole Milk 2.27L / 4 Pints
- 500 G Organic Chopped & Roasted Almonds
- 1.5 Kg Natco Fine Semolina, 1.5Kg
- 250G Sofra Zahidi Dried Dates 250G
- 200G Anchor Unsalted Butter
- - Silver Spoon Icing Sugar
- 750 G Top-Op Table Salt Drums
- 200G Top-Op Cinnamon Sticks Taj 200g
- 300 Ml Rose Water, 300Ml
- NaN Mcdougalls Plain Flour
Instructions
- 1. Start by preparing the filling. Grind almonds until finely ground. Mix them with powdered sugar, a pinch of ground cinnamon from the cinnamon sticks, and a splash of rose water. Set aside.
- 2. In a large mixing bowl, combine semolina flour, a pinch of table salt, and atta chapatti flour.
- 3. Melt the unsalted butter and slowly incorporate it into the flour mixture, ensuring the texture is crumbly.
- 4. Gradually add milk to the flour and butter mixture until a soft dough forms. Knead gently.
- 5. Divide the dough into small balls. Press each ball flat and place a spoonful of the almond filling in the center. Fold the edges over to encase the filling and shape into a smooth ball.
- 6. Use a ma'amoul mold (or your hands) to shape and pattern each filled dough ball.
- 7. Preheat your oven to 350°F (175°C). Place the shaped Ma'amoul onto a baking tray and bake for approximately 20-25 minutes, or until golden.
- 8. Remove from the oven and allow to cool. Dust with more powdered sugar before serving.
