Instructions

  1. 1. Preheat a large skillet over medium-high heat for 2 minutes, then add 2 tbsp of olive oil.
  2. 2. Season the chicken breasts with fajita seasoning, ensuring an even coating, and place them into the skillet. Cook for 6-7 minutes on each side until golden brown and cooked through (internal temperature of 75°C). Remove and let rest for 5 minutes.
  3. 3. While the chicken is resting, slice the bell peppers and red onion into thin strips. Add 1 tbsp of olive oil to the skillet and sauté the vegetables over medium heat for 5-6 minutes until softened and slightly charred.
  4. 4. Warm the tortillas: wrap them in foil and place them in a preheated oven at 180°C for 5 minutes or warm them individually on a dry skillet over medium heat for 30 seconds per side.
  5. 5. Slice the cooked chicken into thin strips and transfer to a serving platter alongside the sautéed vegetables.
  6. 6. Prepare the toppings: dice the avocado, chop the fresh coriander, crumble the feta cheese, and place them in separate serving bowls alongside sour cream, salsa, and lime wedges.
