Ingredients

  • 480 Ml Navarrico Fumet Fish Stock, 480Ml
  • 400G Al Dayaa Tahini Sesame Paste, 400G
  • 110G Gourmet Kitchen Himalayan Pink Salt Grinder
  • 100 G Trs Ground Cumin Jeera Powder
  • - Greenfields Ground Coriander
  • 1 Kg Red Onion 1kg
  • 400 g Trs Turmeric Powder 400G
  • - Natco Ground Cinnamon 100g
  • - Sunita Lemon Juice Organic
  • 100 G Jumbo Garlic 100g

Instructions

  1. 1. Rinse the barramundi fillets under cold water and pat them dry with a paper towel. Season both sides with 1/2 tsp salt, 1/2 tsp ground cumin, and 1/2 tsp ground coriander.
  2. 2. Heat 2 tbsp of olive oil in a large non-stick pan over medium heat. Add the barramundi fillets and sear for 3-4 minutes per side until golden and cooked through. Remove the fish and set aside on a plate covered with foil.
  3. 3. In the same pan, add 2 more tbsp of olive oil and sauté 2 thinly sliced onions over medium heat for 8 minutes until caramelized and golden. Remove half of the caramelized onions and set aside for garnish.
  4. 4. Add 1 cup of basmati rice to the pan with the remaining onions, stirring to coat the rice in the oil and onion mixture. Toast the rice for 2 minutes, then add 2 cups of fish or chicken stock, 1/2 tsp turmeric, 1/2 tsp ground cinnamon, and 1/2 tsp salt.
  5. 5. Bring the rice mixture to a boil, then reduce the heat to low, cover, and simmer for 15 minutes until the rice is tender and the liquid is absorbed.
  6. 6. Prepare the tahini sauce by whisking together 1/3 cup tahini, 2 tbsp lemon juice, 2 tbsp water, 1 clove minced garlic, and 1/4 tsp salt until smooth and creamy.
  7. 7. To assemble, fluff the rice with a fork and transfer it to a large serving platter. Place the barramundi fillets on top of the rice, then garnish with the reserved caramelized onions, 2 tbsp chopped fresh parsley, and 2 tbsp toasted pine nuts.
  8. 8. Serve the Sayadieh-style Barramundi warm, accompanied by the tahini sauce on the side for drizzling. Enjoy this Lebanese-inspired feast with your family!
