Instructions
- 1. Rinse the barramundi fillets under cold water and pat them dry with a paper towel. Season both sides with 1/2 tsp salt, 1/2 tsp ground cumin, and 1/2 tsp ground coriander.
- 2. Heat 2 tbsp of olive oil in a large non-stick pan over medium heat. Add the barramundi fillets and sear for 3-4 minutes per side until golden and cooked through. Remove the fish and set aside on a plate covered with foil.
- 3. In the same pan, add 2 more tbsp of olive oil and sauté 2 thinly sliced onions over medium heat for 8 minutes until caramelized and golden. Remove half of the caramelized onions and set aside for garnish.
- 4. Add 1 cup of basmati rice to the pan with the remaining onions, stirring to coat the rice in the oil and onion mixture. Toast the rice for 2 minutes, then add 2 cups of fish or chicken stock, 1/2 tsp turmeric, 1/2 tsp ground cinnamon, and 1/2 tsp salt.
- 5. Bring the rice mixture to a boil, then reduce the heat to low, cover, and simmer for 15 minutes until the rice is tender and the liquid is absorbed.
- 6. Prepare the tahini sauce by whisking together 1/3 cup tahini, 2 tbsp lemon juice, 2 tbsp water, 1 clove minced garlic, and 1/4 tsp salt until smooth and creamy.
- 7. To assemble, fluff the rice with a fork and transfer it to a large serving platter. Place the barramundi fillets on top of the rice, then garnish with the reserved caramelized onions, 2 tbsp chopped fresh parsley, and 2 tbsp toasted pine nuts.
- 8. Serve the Sayadieh-style Barramundi warm, accompanied by the tahini sauce on the side for drizzling. Enjoy this Lebanese-inspired feast with your family!
