Ingredients
- - Rajah Whole Red Chillies
- 120G Alpenzu Clarified Butter, 120G
- - Greenfields Ground Coriander
- 100 G Saras Turmeric Haldi Powder
- - Schwartz Bay Leaves
- 50G Trs Cardamom Green
- 750 G Top-Op Table Salt Drums
- 45G Natco Cinnamon Sticks, 45G
- 190G Natco Garlic & Ginger Paste, 190G
- 100G East End Garam Masala Powder
Instructions
- 1. Soak 10-12 dried Kashmiri red chilies in warm water for 20 minutes. Blend into a smooth paste and set aside.
- 2. Heat 2 tbsp of clarified butter in a heavy-bottomed pan. Add 2 bay leaves, 2-3 cardamom pods, and 1-inch cinnamon stick. Sauté until aromatic.
- 3. Add 1 cup of diced potatoes and 1 cup of diced carrots. Sauté for 5-7 minutes until slightly browned.
- 4. Add 1 tbsp garlic & ginger paste and sauté for 2 minutes. Stir in 1 tsp turmeric powder, 1 tsp ground coriander, 1 tsp garam masala powder, and salt to taste.
- 5. Add the prepared red chili paste and cook for 5 minutes, stirring occasionally.
- 6. Pour in 1 cup of water and mix well. Cover and simmer for 15-20 minutes until the vegetables are tender.
- 7. Add 1/2 cup of curd and mix well. Cook for another 5 minutes on low heat.
- 8. Garnish with freshly chopped coriander leaves and serve hot with steamed rice or roti.
