Ingredients
- 200 G Authentic Greek Yogurt
- - Natco Black Mustard Seeds
- 1 Kg Red Onion 1kg
- - Fresh Asian Coriander Bunch
- 1 L Ktc Sunflower Oil
- - Ktc Gram Flour 2kg
- 750 G Top-Op Table Salt Drums
- NaN Trs Haldi Powder Turmeric
Instructions
- 1. Finely chop the red onion and green chillies. Set them aside.
- 2. In a large mixing bowl, combine gram flour, glutinous rice flour, turmeric powder, coriander leaf, and table salt. Mix well to ensure the dry ingredients are evenly distributed.
- 3. Add the chopped red onion and green chillies to the dry mixture. Mix thoroughly.
- 4. Gradually add yogurt to the mixture, stirring continuously to form a thick batter. The batter should be smooth and free of lumps.
- 5. Heat a small amount of cooking oil in a pan over medium heat. Add cumin seeds and mustard seeds. Allow them to crackle and release their aroma.
- 6. Pour the tempered oil with the cumin and mustard seeds into the batter. Mix well to incorporate the flavors.
- 7. Grease a steaming tray or plate with a thin layer of cooking oil to prevent sticking.
- 8. Pour the batter into the greased tray, spreading it evenly to form a uniform layer.
- 9. Steam the batter in a steamer or pressure cooker (without the whistle) for 15-20 minutes, or until the mixture is firm and cooked through. Test by inserting a toothpick; it should come out clean.
- 10. Once steamed, allow the mixture to cool completely. Cut it into square or diamond-shaped pieces.
- 11. Heat a shallow frying pan with cooking oil over medium heat. Shallow fry the steamed pieces until they are golden brown and crispy on both sides.
- 12. Serve the Kothimbir Wadi hot with a side of chutney or yogurt for dipping.
