Instructions
- 1. Spray a Dutch oven with cooking spray and heat over medium-high heat.
- 2. Add 1 diced onion and cook, stirring occasionally, until it starts to brown, about 5 minutes.
- 3. Add 3 sliced sweet potatoes and stir to combine. Cook for 4-5 minutes until they begin to soften.
- 4. Stir in 1 cup of diced carrots, 1 tablespoon of chili powder, and 1 teaspoon of ground pepper. Mix well to coat the ingredients with the spices.
- 5. Add 1 diced tomato, 1 cup of tomato sauce, 1 can (15 oz) of kidney beans (drained and rinsed), 1/4 cup of lentils, and 1/4 cup of pickled vegetables. Stir to combine.
- 6. Reduce the heat to low, cover the Dutch oven, and let the stew simmer for 25-30 minutes, or until the sweet potatoes are tender and the flavors have melded together.
- 7. Taste and adjust seasoning if needed. Serve hot and enjoy your hearty kosher lentil stew.
