Ingredients
- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- 2.5 Kg Casa Marrazzo Organic Chopped Tomatoes, 2.5Kg
- - Fritos Original Corn Chips
- 1Pc White Cabbage 1pc
- NaN Plant-Based Grated Mozzarella
- 190G Sundried Tomato Paste, 190G
- - Chilli Powder Rajah
- 500 Ml Daylesford Organic Hot & Sour Vegetable Broth
Instructions
- 1. Heat a large skillet over medium heat and add 1 cup of sundried tomato paste. Cook until heated through, stirring occasionally, about 5-7 minutes.
- 2. Stir in 2 tablespoons of chilli powder, 6 oz of chopped tomatoes, and 1 1/2 cups of hot & sour vegetable broth. Mix well to combine.
- 3. Add 1/4 cup of diced onion to the skillet and simmer the mixture for 15-20 minutes, stirring occasionally, until the flavors meld and the sauce thickens.
- 4. Prepare the serving plates by layering 1 cup of shredded cabbage and 1/2 cup of diced tomatoes on each plate.
- 5. Spoon the tomato mixture over the cabbage and tomatoes, then top with 1/2 cup of plant-based grated mozzarella and a handful of crushed corn chips. Serve immediately.
