- 100 G Jumbo Garlic 100g
- 3 X 400G Garofalo Chopped Italian Tomatoes
- 400G Epicure Organic Red Kidney Beans
- - Cofresh Whole Green Chilli 350g
- - Schwartz Coriander Leaf Jar
- 500 Ml Daylesford Organic Hot & Sour Vegetable Broth
- - Potts Vegetable Stock Can
- - Chilli Powder Rajah
- - Tata Salt
- 1.5 Kg Best In Plain Flour 1.5 Kg
Instructions
- 1. Preheat your oven to 350°F (175°C).
- 2. In a heavy Dutch oven, sauté 1 cup of chopped onion, 1 diced green pepper, and 2 minced garlic cloves in a bit of oil over medium heat until softened, about 5 minutes.
- 3. Add 1 cup of chopped onion, 1 diced green pepper, and 2 minced garlic cloves to the pot and cook until softened, about 5 minutes. Stir in 2 tablespoons of chili powder, 1 teaspoon of salt, and 2 tablespoons of flour. Cook for 2 minutes, stirring constantly, to toast the spices and incorporate the flour.
- 4. Stir in 2 chopped tomatoes, 1 cup of vegetable broth, and 1 cup of vegetable stock. Stir well to combine.
- 5. Mix in 2 cans of kidney beans and 1 diced green chili. Bring the mixture to a simmer.
- 6. Cover the Dutch oven and transfer it to the preheated oven. Bake for 30 minutes to allow the flavors to meld.
- 7. Remove from the oven, stir in a handful of chopped coriander leaves, and adjust seasoning if needed.
- 8. Serve hot, garnished with additional coriander leaves if desired.
