- 50G Picard Chopped Flat Parsley
- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- 100 G Jumbo Garlic 100g
- 1 stick Organic Celery Stick
- 1kg 1kg Green Pepper
- - Jalpur Crushed Red Chilli Pepper Flakes
- 280G Caprichos Del Paladar Roasted Chopped Tomatoes, 280G
- - Potts Vegetable Stock Can
- - Chilli Powder Rajah
- 100 G Trs Ground Cumin Jeera Powder
Instructions
- 1. In a large Dutch oven or saucepan, cook 1 1/2 lbs of chopped onions over medium-high heat, breaking it up with a wooden spoon, for about 7 minutes or until softened.
- 2. Place the cooked onions in a strainer and drain any excess liquid, then return the onions to the pan.
- 3. Reduce heat to medium and add 2 chopped onions, 3 minced garlic cloves, 2 diced celery sticks, and 1 diced green bell pepper. Stir in 2 tbsp chili powder, 1 1/2 tsp oregano, 1 1/2 tsp ground cumin, and 1/2 tsp hot pepper flakes. Cook, stirring often, for 5 minutes or until the vegetables are softened.
- 4. Stir in 1 can of diced tomatoes with juice and 1 cup of vegetable stock. Bring the mixture to a boil, then reduce heat, cover, and simmer, stirring occasionally, for 1 hour.
- 5. Add 1/4 cup chopped parsley and simmer for 10 minutes more, ensuring all flavors are well combined.
- 6. Serve hot as a hearty dinner option, garnished with additional parsley if desired.
