Ingredients
- 6 Each Golden Yolk Eggs 6 Pack
- 50G Pepper Black Ground BWFO
- - Weikfield Date & Tamarind Chutney
- 1 Kg Red Onion 1kg
- 1 Piece Cucumber 1Pc
- 400G Shana Original Paratha
- 1 Kg Heera Maida Flour,1kg
- 750 G Top-Op Table Salt Drums
- 1 L Crisp N Dry Oil
- 100G Chaat Masala Mangal, 100G
Instructions
- 1. Prepare the dough by mixing 1 cup all-purpose flour, 1/4 tsp salt, 1 tsp oil, and enough water to make a soft dough. Knead well, cover, and let it rest for 30 minutes.
- 2. Divide the dough into 2-3 equal portions. Roll each portion into a thin circle using a rolling pin.
- 3. Heat a tawa or skillet on medium flame. Cook each rolled paratha on both sides, applying a little oil, until golden brown and crispy. Set aside.
- 4. In a bowl, beat 2-3 eggs with a pinch of salt and a dash of pepper. Heat a little oil on the tawa and pour the beaten egg mixture to form a thin omelette.
- 5. Place a cooked paratha on top of the omelette while it is still cooking. Press gently so the paratha sticks to the omelette. Flip and cook for a few seconds. Remove from heat.
- 6. Spread a thin layer of green chutney or ketchup on the egg side of the paratha. Add thinly sliced onions, cucumber, and a sprinkle of Chaat Masala Mangal, 100G.
- 7. Roll the paratha tightly, wrapping it in parchment paper or foil for easy handling. Repeat for the remaining portions.
- 8. Serve the Kolkata Style Egg Rolls hot with extra chutney or ketchup on the side.
