Instructions

  1. 1. In a large mixing bowl, combine grated onion, garlic, chopped parsley, chopped mint, ground cumin, ground coriander, smoked paprika, ground cinnamon, salt, and black pepper. Mix thoroughly until well combined.
  2. 2. Divide the mixture into 4 equal portions and shape each into a patty about 2 cm thick. Place the patties on a plate, cover, and refrigerate for 10 minutes to help them firm up.
  3. 3. While the patties chill, prepare the tahini yogurt sauce by whisking together yogurt, tahini, lemon juice, grated garlic, salt, and water in a small bowl until smooth and creamy. Adjust the consistency by adding more water if needed.
  4. 4. Heat a large grill pan or frying pan over medium-high heat. Drizzle the pan with olive oil and cook the patties for 5-6 minutes on each side, or until fully cooked and browned on the outside.
  5. 5. While the patties cook, warm the flatbreads in a dry pan or in the oven for 2-3 minutes until soft and pliable.
  6. 6. Assemble the burgers by placing each patty onto a flatbread. Top with a generous spoonful of tahini yogurt sauce, shredded lettuce, sliced tomatoes, sliced red onions, and pickled cucumbers. Fold the flatbread around the burger or serve open-faced.
