- 2.27L / 4 Pints British Whole Milk 2.27L / 4 Pints
- 369G Kimchi, 369G
- 125G Galbani Italian Mozzarella Cheese
- 200G Arla Lactofree Mature Cheddar Cheese
- 200G Anchor Unsalted Butter
- 750 G Top-Op Table Salt Drums
- NaN Mcdougalls Self Raising Flour
Instructions
- 1. Cook the elbow macaroni following the package instructions. Drain and set aside.
- 2. In a large saucepan, melt 2 tablespoons of unsalted butter over medium heat.
- 3. Stir in 2 tablespoons of refined flour, cooking for about 1-2 minutes until smooth and bubbly to form a rue.
- 4. Gradually add 2 cups of toned milk while whisking continuously, and cook until the mixture thickens and smooths.
- 5. Add 200g of natural cheddar cheese slices and 150g of shredded mozzarella to the sauce, stirring until the cheese melts and forms a creamy sauce.
- 6. Season the cheese sauce with a pinch of white pepper and salt according to your taste.
- 7. Fold in 150g of kimchi into the sauce, distributing well through the mixture.
- 8. Mix the sauce with the cooked macaroni until everything is well combined.
- 9. Transfer the mac and cheese to a baking dish, and sprinkle chilli flakes on top for extra spice.
- 10. Optional - Place under a broiler for 3-4 minutes until the top becomes golden brown and bubbly.
