Ingredients
- 2.27L / 4 Pints British Whole Milk 2.27L / 4 Pints
- 50G Greenfields Green Cardamon, 50G
- 1 Kg Natco Brown Basmati Rice, 1Kg
- 454G Goya Brown Cane Sugar, 454G
Instructions
- 1. Rinse 1/4 cup of basmati rice thoroughly and soak it in water for 20 minutes. Drain and set aside.
- 2. In a heavy-bottomed pan, bring 4 cups of full-fat milk to a boil over medium heat. Stir occasionally to prevent the milk from sticking to the bottom.
- 3. Once the milk starts boiling, add the soaked and drained rice. Stir well and lower the heat to maintain a gentle simmer.
- 4. Cook the rice in the milk, stirring frequently, for 20-25 minutes until the rice is soft and the mixture begins to thicken.
- 5. Add 1/4 cup of brown cane sugar and stir until it dissolves completely. Adjust the sweetness as per your taste.
- 6. Add 1/4 tsp of green cardamom powder and mix well. Let it simmer for another 5 minutes to allow the flavors to blend.
- 7. Turn off the heat and stir in 2 tbsp of chopped nuts (like almonds and pistachios) and 1 tbsp of organic fruit & nut mix. Mix well.
- 8. Serve the kheer warm or chilled, garnished with additional chopped nuts and a few strands of saffron soaked in 1 tbsp of warm milk.
