- 50G Pepper Black Ground BWFO
- 6 Each Golden Yolk Eggs 6 Pack
- 200G East End Desiccated Coconut
- 450G Rice Flour, 450G
- 1 L Crisp N Dry Oil
- 500 Ml Haday Signature Dark Soy Sauce, 500Ml
Instructions
- 1. In a bowl, mix 1/2 cup rice flour, 1/4 cup all-purpose flour, 1/4 cup mung bean flour, 1/4 tsp salt, and 1/2 cup water. Whisk until smooth. Let the batter rest for 15 minutes.
- 2. In a separate bowl, beat 2 egg whites until stiff peaks form. Gently fold the egg whites into the batter to create a light and airy mixture.
- 3. Heat a non-stick pan over medium heat. Lightly grease with cooking oil. Pour a small ladle of batter onto the pan, spreading it into a thin circle. Cook until the edges lift and the crepe is golden brown. Flip and cook the other side briefly. Repeat for all crepes.
- 4. For the filling, cook 100g minced chicken in a pan with 1 tsp cooking oil, 1 tsp dark soy sauce, 1/2 tsp sugar, and 1/4 tsp pepper until fully cooked. Set aside.
- 5. For the sweet topping, mix 1/4 cup desiccated coconut with 1 tbsp sugar and 1 tbsp water. Cook in a pan until the sugar dissolves and the mixture thickens. Set aside.
- 6. Assemble the crepes: Spread a thin layer of the sweet coconut mixture on one half of each crepe. On the other half, place a spoonful of the cooked chicken filling.
- 7. Fold the crepe in half, pressing gently to seal. Serve warm as a sweet and savory treat.
