  • 100G Natco Black Mustard Seeds, 100G
  • 15G Fresh Curry Leaves - Approx 15G
  • 400G Koko Dairy Free Plain Yogurt Alternative
  • 2 Kg Ktc Superfine Gram Flour 2kg
  • NaN Trs Haldi Powder Turmeric
  • 1 Kg Tate & Lyle Granulated Sugar 1Kg

Instructions

  1. 1. In a mixing bowl, add 1 cup of Ktc Superfine Gram Flour.
  2. 2. Gradually add 1/2 cup of curd (yogurt) and mix well to form a smooth batter. Ensure there are no lumps.
  3. 3. Add 1/2 cup of water to adjust the consistency of the batter. The batter should be thick but pourable.
  4. 4. Add 1 teaspoon of sugar, 1/2 teaspoon of turmeric powder, 1/2 teaspoon of ginger-green chili paste, and a pinch of salt to the batter. Mix thoroughly.
  5. 5. Let the batter rest for 10-15 minutes to allow the ingredients to combine well.
  6. 6. Just before steaming, add 1 teaspoon of fruit salt (e.g., Eno) or 1/2 teaspoon of baking soda to the batter. Mix gently but quickly to incorporate air into the batter.
  7. 7. Grease a steaming tray or plate with oil and pour the batter into it. Spread it evenly.
  8. 8. Place the tray in a steamer and steam the batter for 15-20 minutes on medium heat, or until a toothpick inserted in the center comes out clean.
  9. 9. Once steamed, remove the tray from the steamer and let it cool slightly before cutting the dhokla into square or diamond-shaped pieces.
  10. 10. For the tempering, heat 1 tablespoon of oil in a small pan. Add 1 teaspoon of mustard seeds, 1-2 green chilies (slit), and a few curry leaves. Let them splutter.
  11. 11. Pour the tempering evenly over the steamed dhokla pieces.
  12. 12. Garnish with freshly chopped coriander leaves and grated coconut (optional).
  13. 13. Serve the Khaman Dhokla warm with green chutney or tamarind chutney.
