  • 500G White Pearl Italian Pudding Rice 500g
  • 470 G Dabur Organic Ghee
  • 560G Yorkshire Provender Rustic Vegetable Broth With Lentils Kale & Quinoa
  • 450G Pack'D Organic Super Sweet Sweetcorn
  • - Tata Salt
  • - Schwartz Coriander Leaf Jar

Instructions

  1. 1. Rinse 1 1/2 cups of rice thoroughly under cold water until the water runs clear.
  2. 2. In a large pot, bring 3 cups of vegetable broth to a boil. Add the rinsed rice, 2 tablespoons of ghee, and 1 teaspoon of salt. Stir well.
  3. 3. Reduce the heat to low, cover the pot, and let the rice cook for about 15-20 minutes until tender and the broth is absorbed.
  4. 4. In a separate pan, heat 1/4 teaspoon of in 1 tablespoon of ghee over low heat. Add 1 cup of sweetcorn and stir well to combine.
  5. 5. Once the rice is cooked, gently fold the sweetcorn mixture into the rice. Cover and let it sit on low heat for 5 minutes to allow the flavors to meld.
  6. 6. Serve the creamy corn rice hot, garnished with freshly chopped coriander leaves if desired.
