  • - Sunita Lemon Juice Organic
  • 1 Kg Trade Aid Caster Sugar 1kg
  • - Natco Ground Cinnamon 100g
  • 50G Top-Op Clove Powder 50g
  • - Bart Allspice Ground 40g

Instructions

  1. 1. Wash and dry the plums thoroughly.
  2. 2. Place the plums in a large, non-reactive bowl or jar.
  3. 3. In a saucepan, combine 2 cups of lemon juice, 6 cups of sugar, 1 tablespoon of ground cinnamon, 1 tablespoon of ground clove, 1 teaspoon of ground allspice. Bring the mixture to a boil and simmer for 10 minutes.
  4. 4. Pour the hot spiced syrup over the plums, ensuring they are fully submerged. Cover the bowl or jar and let it sit overnight at room temperature.
  5. 5. The next day, drain the liquid from the plums into a saucepan and bring it to a boil again.
  6. 6. Add the plums to the boiling syrup and cook gently until the plums are translucent but still hold their shape, about 10-15 minutes.
  7. 7. Carefully pack the cooked plums into clean, hot jars, leaving some space at the top. Pour the hot syrup over the plums to cover them completely.
