Ingredients
- 1.8 Kg Daylesford Organic Lamb Shoulder Joint Boned & Rolled
- 1.5 Kg Harry & Percy British Mashing Potatoes
- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- 250G Tilda Wild Rice
- 1 Kg Sapna Garlic Paste 1kg
- 290G Portland Mills Jamaican Curry Powder, 290G
- 100G Celery Salt, 100G
- - Mill & Mortar Finishing Salt Flakes Gift Set
Instructions
- 1. Cut 1 1/2 lb lamb into bite-sized pieces and set aside.
- 2. Peel and dice 3/4 lb potatoes and 3/4 lb onions.
- 3. Heat a large saucepan over medium heat and add the lamb pieces. Sear them until browned on all sides, about 5-7 minutes.
- 4. Add the diced onions to the pan and sauté for 3-4 minutes until softened.
- 5. Stir in 1 tsp garlic paste, 1 tsp curry powder, and 1/2 tsp celery salt. Cook for 1-2 minutes until fragrant.
- 6. Add the diced potatoes to the pan and pour in enough cold water to cover the ingredients. Bring to a boil, then skim off any foam that rises to the surface.
- 7. Reduce the heat to a gentle simmer and cook for 45-50 minutes, stirring occasionally, until the lamb is tender and the potatoes are cooked through.
- 8. Taste and adjust the seasoning with salt and additional spices if needed. Serve hot with rice or bread.
