Instructions

  1. 1. Cut 1 1/2 lb lamb into bite-sized pieces and set aside.
  2. 2. Peel and dice 3/4 lb potatoes and 3/4 lb onions.
  3. 3. Heat a large saucepan over medium heat and add the lamb pieces. Sear them until browned on all sides, about 5-7 minutes.
  4. 4. Add the diced onions to the pan and sauté for 3-4 minutes until softened.
  5. 5. Stir in 1 tsp garlic paste, 1 tsp curry powder, and 1/2 tsp celery salt. Cook for 1-2 minutes until fragrant.
  6. 6. Add the diced potatoes to the pan and pour in enough cold water to cover the ingredients. Bring to a boil, then skim off any foam that rises to the surface.
  7. 7. Reduce the heat to a gentle simmer and cook for 45-50 minutes, stirring occasionally, until the lamb is tender and the potatoes are cooked through.
  8. 8. Taste and adjust the seasoning with salt and additional spices if needed. Serve hot with rice or bread.
