Ingredients

  • 1 Kg Laila Basmati Rice
  • 500 G Jack'S Cauliflower Florets
  • 325G Monjardin Organic Haricot Beans, 325G
  • - Yellow Bell Peppers
  • 1 Kg Tomatoes 1kg
  • - Amul Masti Dahi
  • - Fresh Asian Coriander Bunch
  • 1 L Amul Pure Ghee 1 L Tin
  • - Jalpur Cumin Seeds
  • 100 G Rajah Garam Masala
  • - Jalpur Red Chilli Powder Fine
  • - Schwartz Saffron Jar
  • - Vandevi Asafoetida 50g
  • - Jalpur Fresh Peas - (Garden Peas)
  • - Tata Salt
  • 400 g Trs Turmeric Powder 400G

Instructions

  1. 1. Rinse the basmati rice in cold water until the water runs clear, then soak it for 30 minutes. Drain and set aside.
  2. 2. Heat 2 tablespoons of ghee or vegetable oil in a large pot over medium heat. Add cumin seeds and hing, and sauté until aromatic.
  3. 3. Add the chopped tomatoes, turmeric powder, red chili powder, and a pinch of salt. Cook until the tomatoes break down and form a thick paste.
  4. 4. Stir in the cauliflower, green beans, peas, and bell peppers. Cook for 5-7 minutes, stirring occasionally, until the vegetables are slightly tender.
  5. 5. Add the yogurt, garam masala, and half of the chopped coriander. Mix well to coat the vegetables evenly.
  6. 6. In a separate pot, bring water to a boil, add the soaked rice, and cook until 70% done. Drain the rice and layer it over the vegetable mixture in the first pot.
  7. 7. Sprinkle the saffron threads (soaked in 2 tablespoons of warm milk or water) over the rice and cover the pot with a tight-fitting lid.
  8. 8. Reduce the heat to low and cook on dum (steam) for 20 minutes to let the flavors meld and the rice finish cooking.
  9. 9. Remove from heat and let the biryani rest for 5 minutes before gently fluffing it with a fork. Garnish with the remaining coriander.
  10. 10. Serve hot with a side of raita or your favorite chutney.
