Instructions

  1. 1. In a Dutch oven, cook and stir 1 1/2 lbs ground beef and 1/2 cup chopped onion over medium heat until the beef is browned and the onion is tender. Drain any excess fat.
  2. 2. Stir in 1 can of chopped tomatoes, 1 diced potato, 1 1/2 cups beef stock, 1/2 cup chopped celery, 2 teaspoons salt, and 1/2 teaspoon pepper. Bring the mixture to a boil, then reduce the heat to low.
  3. 3. Cover the Dutch oven and let the mixture simmer for 20 minutes, stirring occasionally.
  4. 4. In a separate bowl, mix 2 cups of chopped potato with 2/3 cup milk to form a soft dough.
  5. 5. Drop spoonfuls of the dough onto the simmering beef and vegetable mixture, ensuring the dumplings do not sink into the liquid.
  6. 6. Cook the mixture uncovered over low heat for 10 minutes, then cover and cook for an additional 10 minutes until the dumplings are cooked through and fluffy.
  7. 7. Garnish the dish with fresh parsley sprigs before serving. Serve hot and enjoy!
