- 1 Kg Red Onion 1kg
- - Tata Salt
- 220G La Costena Chipotle Sauce, 220G
- 180G Capote Capers In Salted Water, 180G
Instructions
- 1. In a large, heavy frying pan, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium heat until melted, then turn off the burner.
- 2. Finely chop 1 red onion and mince 1 clove of garlic. Add them to the pan and cook on low heat, stirring constantly, for 10 minutes until softened.
- 3. Add 500 g of halal ground beef to the pan. Cook for 15 minutes, stirring occasionally, until the meat is browned and fully cooked.
- 4. While the beef is cooking, chop 1 tomato and slice 1 mushroom. Add the tomato, mushroom (including its liquid), 1 can of cream-style sweet corn, 3/4 cup of chipotle sauce, and 1/4 cup of chopped capers to the pan. Stir well to combine.
- 5. Season the mixture with 3 teaspoons of salt, stirring to distribute evenly.
- 6. Gradually sift in 3/4 cup of yellow cornmeal while stirring continuously to avoid lumps. Mix thoroughly until the cornmeal is fully incorporated.
- 7. Stir in 1/4 cup of freshly grated parmesan cheese, ensuring it melts into the mixture.
- 8. Transfer the mixture to a baking dish, sprinkle the remaining 1/4 cup of parmesan cheese evenly on top, and bake in a preheated oven at 375°F (190°C) for 20 minutes until the top is golden and bubbly.
- 9. Remove from the oven and let the tamale pie cool for 5 minutes before serving.
