  • - Thomas Ridley Fresh British Beef Mince
  • 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
  • 400G Italianavera Chopped Tomatoes, 400G
  • NaN Godavari Sona Masoori Raw Rice
  • 450G Pack'D Organic Super Sweet Sweetcorn
  • 280G Caprichos Del Paladar Roasted Chopped Tomatoes, 280G
  • 500 Ml Daylesford Organic Hot & Sour Vegetable Broth

Instructions

  1. 1. In a large skillet, brown 500 g of halal ground beef with 1 diced onion over medium heat until the beef is fully cooked and the onion is softened, about 8-10 minutes.
  2. 2. Drain any excess fat from the skillet and set the beef mixture aside.
  3. 3. In a large pot, combine 1 can (400 g) of diced tomatoes, 1 can (400 g) of sweetcorn, 1 can (400 g) of mixed vegetables, 1 can (400 g) of chopped tomatoes, and 1 cup of uncooked rice.
  4. 4. Add 4 cups of vegetable broth to the pot and bring the mixture to a boil over medium-high heat, stirring frequently to prevent sticking.
  5. 5. Once boiling, reduce the heat to low and stir in the cooked beef and onion mixture.
  6. 6. Cover the pot and let the soup simmer for 30 minutes, stirring occasionally, until the rice is tender and the flavors are well combined.
  7. 7. Serve hot and enjoy. This soup can also be frozen for later use.
