Instructions
- 1. Begin by preparing the batter. In a large mixing bowl, combine 1 cup of Heera Maida Flour with a pinch of Top-Op Table Salt. Gradually add 3/4 cup of water while whisking to create a smooth, lump-free batter.
- 2. Crack 2 Golden Yolk Eggs into the batter and whisk until fully incorporated. Set the batter aside to rest for 10 minutes.
- 3. While the batter rests, prepare the vegetables. Thinly slice the Spring Onions and cut the Courgettes (Zucchini) into thin matchsticks. Set them aside.
- 4. Heat a non-stick frying pan over medium heat and add 2 tablespoons of Crisp N Dry Oil. Once the oil is hot, add the Whitby Seafoods Garlic & Herb Prawns and cook for 2-3 minutes until they are lightly golden and heated through. Remove the prawns from the pan and set aside.
- 5. In the same pan, add another tablespoon of Crisp N Dry Oil. Spread half of the prepared batter evenly across the pan to form a thin pancake base.
- 6. Arrange the sliced Spring Onions, Courgettes, and cooked Garlic & Herb Prawns evenly over the batter. Drizzle a small amount of batter over the toppings to help them stick.
- 7. Cook the pancake for 3-4 minutes on one side, or until the edges are crispy and the bottom is golden brown. Carefully flip the pancake using a spatula and cook for another 2-3 minutes on the other side.
- 8. While the pancake cooks, prepare the dipping sauce. In a small bowl, mix 2 tablespoons of Amoy Dark Soy Sauce with a pinch of Top-Op Table Salt. Adjust the seasoning to taste.
- 9. Once the pancake is cooked, transfer it to a serving plate. Repeat the process with the remaining batter and ingredients to make additional pancakes.
- 10. Serve the Haemul Pajeon hot with the prepared dipping sauce on the side. Enjoy your delicious Korean seafood pancake!
