Instructions
- 1. Heat the olive oil in a large non-stick pan over medium heat. Add the cumin seeds and let them sizzle for 30 seconds until aromatic.
- 2. Add the diced red and yellow bell peppers and courgette. Sauté for 5-7 minutes until they soften slightly.
- 3. Stir in the smoked paprika, salt, and black pepper. Cook for an additional 2 minutes to coat the vegetables in the spices.
- 4. Add the halved cherry tomatoes and cook for 3-4 minutes until they begin to soften and release their juices.
- 5. Toss in the spinach leaves and stir gently until wilted, about 2 minutes.
- 6. Remove the pan from heat and sprinkle the grated cheddar cheese over the top. Cover the pan for 2 minutes to allow the cheese to melt.
- 7. Finish with a generous squeeze of lemon juice and garnish with freshly chopped parsley.
