- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- 1 Kg Carrots - 1kg
- 100 G Jumbo Garlic 100g
- 500 G Fresh Vine Tomato 500g
- 400G Trs Canned Black Eye Beans 400G
- - McCormick Gourmet Organic Cayenne Pepper MCG-24431
- 1 L Crisp N Dry Oil
- 100G Heera Hot Madras Curry Powder 100g
- - Tata Salt
Instructions
- 1. Start by preparing the vegetables: peel and dice the onions (Fresh Onion Pack. 1kg - Ofoodi African Store), mince the garlic (Jumbo Garlic 100g), peel and chop the carrots (Carrots - 1kg) into small cubes, and trim the fine beans (Fine Beans 500g). Dice the fresh vine tomatoes (Fresh Vine Tomato 500g) into small pieces.
- 2. Heat 2-3 tablespoons of Crisp N Dry Oil in a large pot over medium heat.
- 3. Add the diced onions to the pot and sauté until they become translucent, about 3-4 minutes.
- 4. Stir in the minced garlic and cook for another 1-2 minutes, ensuring it does not burn.
- 5. Add the chopped carrots and fine beans to the pot. Stir well and cook for 5-7 minutes, allowing the vegetables to soften slightly.
- 6. Add the diced fresh vine tomatoes and cook for another 3-4 minutes, stirring occasionally, until the tomatoes break down and form a sauce.
- 7. Drain and rinse the Trs Canned Black Eye Beans (400G) and add them to the pot. Stir well to combine.
- 8. Add 1 teaspoon of Heera Hot Madras Curry Powder (100g) and 1/2 teaspoon of McCormick Gourmet Organic Cayenne Pepper (MCG-24431) for spice. Adjust the amount of cayenne pepper to your heat preference.
- 9. Season the mixture with a pinch of Tata Salt and Natural Sea Salt Bwfo to taste. Stir well to ensure the spices and salt are evenly distributed.
- 10. Add 1-2 tablespoons of Heinz Tomato Ketchup for a touch of sweetness and tanginess. Stir to combine.
- 11. If the mixture appears too dry, add a splash of water to achieve your desired consistency. Cover the pot and let the Githeri simmer on low heat for 10-15 minutes, allowing the flavors to meld together.
- 12. While the Githeri is simmering, prepare the Natco Popping Corn as a side or snack (optional). Follow the instructions on the package to pop the corn, and season with a pinch of salt if desired.
- 13. Once the Githeri is ready, taste and adjust the seasoning if necessary. Serve hot, optionally garnished with fresh herbs or alongside the popped corn as a crunchy accompaniment.
