- 250 Ml PLJ Lemon Juice Original Sharp 500ml

- 1. Heat the olive oil in a large pot over medium heat. Add the chopped leek (green part only) and hing, and sauté for 2-3 minutes until fragrant.
- 2. Add the chopped courgette and peas to the pot. Stir well and cook for another 3-4 minutes to combine the flavors.
- 3. Pour in the vegetable stock, cover the pot, and bring to a gentle simmer. Cook for 10-12 minutes until the vegetables are tender.
- 4. Remove the pot from heat and let it cool slightly. Blend the soup using a hand blender or in batches in a regular blender until smooth.
