Instructions
- 1. Heat the vegetable oil in a large pot over medium heat for 2 minutes, then sauté the onion until soft and translucent, about 5 minutes.
- 2. Add the minced garlic, grated ginger, and diced chili, and cook for 1-2 minutes, stirring frequently, until fragrant.
- 3. Stir in the tomato paste and diced tomatoes, cooking for 5 minutes to concentrate the flavors and break down the tomatoes.
- 4. Add the peanut butter, stirring continuously, then gradually pour in the chicken stock while mixing to create a smooth, rich base.
- 5. Season the stew with ground cumin, smoked paprika, and salt. Bring the mixture to a gentle boil, then reduce the heat to low and simmer.
- 6. Add the diced sweet potatoes and carrots, cover the pot, and let the stew simmer for 25-30 minutes, stirring occasionally, until the vegetables are tender.
- 7. Stir in the spinach leaves and cook for another 2-3 minutes until wilted. Adjust seasoning with salt and pepper to taste.
- 8. Serve the stew hot, garnished with chopped fresh coriander and a squeeze of lime, alongside steamed rice or crusty bread for a complete meal.
