Instructions

  1. 1. Preheat your oven to 190°C (375°F, Gas Mark 5) and prepare all your ingredients by thinly slicing the onions and patting the pork chops dry with kitchen paper.
  2. 2. Heat 2 tablespoons of olive oil in a large, oven-safe skillet over medium heat. Season the pork chops generously with salt and pepper, then sear them in the hot skillet for 3-4 minutes per side until golden brown. Remove the pork chops and set aside.
  3. 3. In the same skillet, melt 2 tablespoons of unsalted butter over medium heat. Add the sliced onions and a pinch of salt. Cook the onions for 15-20 minutes, stirring occasionally, until they are deeply caramelized and golden brown.
  4. 4. Add the minced garlic to the onions and cook for 1 minute until fragrant. Sprinkle 1 tablespoon of plain flour over the onions, stir well, and cook for another minute to remove the raw flour taste.
  5. 5. Deglaze the skillet with a splash of water, scraping up any browned bits from the bottom of the pan. Let the liquid reduce slightly, about 2-3 minutes.
  6. 6. Stir in 250 ml of beef stock, 1 teaspoon of fresh thyme leaves, and 1 teaspoon of Dijon mustard. Bring the mixture to a simmer.
  7. 7. Return the seared pork chops to the skillet, nestling them into the onion mixture. Spoon some of the sauce over the chops.
  8. 8. Transfer the skillet to the preheated oven and bake for 15 minutes, or until the pork chops reach an internal temperature of 63°C (145°F).
  9. 9. Remove the skillet from the oven and let the pork chops rest for 5 minutes before serving. Garnish with additional thyme if desired. Serve hot with mashed potatoes or crusty bread to soak up the flavorful sauce.
