Instructions
- 1. Preheat your oven to 190°C (375°F, Gas Mark 5) and prepare all your ingredients by thinly slicing the onions and patting the pork chops dry with kitchen paper.
- 2. Heat 2 tablespoons of olive oil in a large, oven-safe skillet over medium heat. Season the pork chops generously with salt and pepper, then sear them in the hot skillet for 3-4 minutes per side until golden brown. Remove the pork chops and set aside.
- 3. In the same skillet, melt 2 tablespoons of unsalted butter over medium heat. Add the sliced onions and a pinch of salt. Cook the onions for 15-20 minutes, stirring occasionally, until they are deeply caramelized and golden brown.
- 4. Add the minced garlic to the onions and cook for 1 minute until fragrant. Sprinkle 1 tablespoon of plain flour over the onions, stir well, and cook for another minute to remove the raw flour taste.
- 5. Deglaze the skillet with a splash of water, scraping up any browned bits from the bottom of the pan. Let the liquid reduce slightly, about 2-3 minutes.
- 6. Stir in 250 ml of beef stock, 1 teaspoon of fresh thyme leaves, and 1 teaspoon of Dijon mustard. Bring the mixture to a simmer.
- 7. Return the seared pork chops to the skillet, nestling them into the onion mixture. Spoon some of the sauce over the chops.
- 8. Transfer the skillet to the preheated oven and bake for 15 minutes, or until the pork chops reach an internal temperature of 63°C (145°F).
- 9. Remove the skillet from the oven and let the pork chops rest for 5 minutes before serving. Garnish with additional thyme if desired. Serve hot with mashed potatoes or crusty bread to soak up the flavorful sauce.
