Ingredients
- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- - Jalpur Fresh Peas - (Garden Peas)
- - Cofresh Whole Green Chilli 350g
- 100 G Jumbo Garlic 100g
- - Ginger - 100g
- 600G Ginni'S Cashew Nuts Spicy 600g
- 400G Casa Marrazzo Peeled Organic Tomatoes, 400G
- 100 G Jalpur Desiccated Coconut 100g
- - Schwartz Coriander Leaf Jar
- 1 Kg Laila Basmati Rice
- 60G Mill & Mortar Organic Salt Of Hearts, 60G
- - Silver Spoon Granulated Sugar
- - Ktc Vegetable Oil
Instructions
- 1. Heat 2 tablespoons of vegetable oil in a large pan over medium heat and sauté 1 chopped onion until golden brown, about 5 minutes. Remove the onion and set aside.
- 2. Add 2 more tablespoons of vegetable oil to the pan. Once hot, return half of the sautéed onion to the pan along with 2 cups of basmati rice, 1/2 cup of peas, 1 finely chopped green chili, 1 minced clove of garlic, 1/2 teaspoon of grated fresh ginger, and 1/2 cup of spicy cashew nuts. Stir and sauté over low heat for 1 minute.
- 3. Add 2 chopped tomatoes, 1/2 teaspoon of salt, 1/2 teaspoon of sugar, and 4 cups of water to the pan. Raise the heat to bring the mixture to a boil.
- 4. Reduce the heat to low, cover the pan, and cook for 10-12 minutes, or until the rice is fully cooked and the water has been absorbed.
- 5. Sprinkle the cooked rice with 1/4 cup of grated coconut, the remaining sautéed onion, and 1 1/2 teaspoons of dried coriander leaves. Serve warm.
