  • NaN Filippo Berio Classico Pure Olive Oil
  • 450G Rose Rice Flour, 450G
  • 450G Glutinous Rice Flour, 450G
  • 1 Kg White Granulated Sugar

Instructions

  1. 1. Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
  2. 2. In a mixing bowl, combine 1 cup of white sugar with 2 tablespoons of rice flour and 2 tablespoons of glutinous rice flour.
  3. 3. Gradually add 4 tablespoons of olive oil to the dry ingredients and mix until the batter is smooth without any lumps.
  4. 4. Drop a tablespoon of batter onto the prepared baking sheet and spread it out into a thin circle using the back of a spoon.
  5. 5. Bake in the preheated oven for about 5-7 minutes, or until the edges turn golden brown.
  6. 6. Quickly remove each cookie one at a time from the baking sheet, lay a paper fortune strip on the center, fold the cookie in half, and bend gently to form the classic fortune cookie shape.
  7. 7. Place the shaped cookies in a muffin tin or cup to hold their shape as they cool completely.
  8. 8. Once cooled, store the fortune cookies in an airtight container to maintain their crispness.
