Instructions

  1. Preheat your oven to 200°C (392°F). Prepare the banana leaves by rinsing them thoroughly and patting them dry. Set aside.
  2. In a mixing bowl, combine the following ingredients to create the marinade: garlic (minced), ginger (grated), turmeric powder, paprika powder, ground cumin, ground coriander, salt, black pepper, and fish broth. Mix well to form a paste.
  3. Finely chop the onions, green chillies, coriander, and parsley. Add these chopped ingredients to the marinade and mix thoroughly.
  4. Brush the fish fillets with cooking oil and olive oil. Coat each fillet generously with the prepared marinade, ensuring all sides are covered.
  5. Place each marinated fish fillet onto a banana leaf. Wrap the leaf tightly around the fish to form a parcel. Secure the parcels with kitchen twine or toothpicks if necessary.
  6. Arrange the banana leaf parcels on a baking tray. Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flaky.
  7. Remove the parcels from the oven and carefully unwrap the banana leaves. Serve the fish hot, garnished with additional coriander and parsley if desired.
