Instructions

  1. 1. Prepare the vegetables: Peel and thinly slice the red onion. Wash the courgettes (zucchini) and cut them into bite-sized pieces.
  2. 2. Drain and rinse the tofu, then cut it into cubes.
  3. 3. Heat a medium-sized pot over medium heat and add 1 tablespoon of sesame oil. Once the oil is hot, add 1 tablespoon of minced garlic paste and the sliced red onion. Sauté for 2-3 minutes until fragrant and the onions are softened.
  4. 4. Add the courgettes and sliced mushrooms to the pot. Stir well and cook for another 3-4 minutes until the vegetables begin to soften.
  5. 5. Add 3 cups of water to the pot and bring it to a boil. Once boiling, reduce the heat to medium-low and stir in 2-3 tablespoons of soybean paste until fully dissolved. Adjust the amount of soybean paste to taste.
  6. 6. Gently add the cubed tofu to the pot. Simmer the stew for 10-12 minutes, allowing the flavors to meld together.
  7. 7. While the stew is simmering, prepare the sesame seaweed salad by thawing it according to the package instructions. This will be served as a side dish to complement the stew.
