Ingredients
- 2.27L / 4 Pints British Whole Milk 2.27L / 4 Pints
- Pack Tray Of 30 Medium Free Range Eggs
- - Anchor Salted Butter 200g
- 1.5 Kg Matthews Cotswold Organic Plain Flour, 1.5Kg
- 750 G Top-Op Table Salt Drums
Instructions
- 1. In a large mixing bowl, sift 250g of Matthews Cotswold Organic Plain Flour to remove any lumps and ensure a smooth batter.
- 2. Add a pinch of Top-Op Table Salt to the flour for flavor balance.
- 3. Crack 2 medium free-range eggs from the Tray of 30 Medium Free Range Eggs into the bowl with the flour and salt.
- 4. Gradually pour in 500ml of British Whole Milk while whisking continuously to create a smooth, lump-free batter.
- 5. Melt 25g of Anchor Salted Butter in a small pan over low heat, then let it cool slightly before adding it to the batter. Whisk to combine.
- 6. Cover the bowl with cling film or a clean kitchen towel and let the batter rest for at least 30 minutes at room temperature. This helps the flour absorb the liquid and improves the texture of the crepes.
- 7. Heat a non-stick frying pan over medium heat and lightly grease it with a small amount of Anchor Salted Butter.
- 8. Pour a ladleful of batter into the pan, swirling it around to evenly coat the surface with a thin layer.
- 9. Cook the crepe for 1-2 minutes, or until the edges start to lift and the bottom is golden brown. Flip the crepe using a spatula and cook the other side for another 30 seconds to 1 minute.
- 10. Transfer the cooked crepe to a plate and repeat the process with the remaining batter, greasing the pan with a little butter as needed.
- 11. Serve the crepes warm with your choice of toppings or fillings, such as sugar, lemon juice, fruit, or chocolate spread.
