Instructions
- 1. Bring a large pot of salted water to a boil. Cook the spaghetti for 8-10 minutes, or until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.
- 2. While the spaghetti cooks, season the chicken breasts with salt, pepper, and 1 teaspoon of dried mixed herbs. Heat olive oil in a large skillet over medium heat and cook the chicken for 5-6 minutes on each side, or until golden brown and fully cooked. Remove from the pan and let rest for 5 minutes before slicing into thin strips.
- 3. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute, or until fragrant. Stir in the flour and cook for 1-2 minutes, creating a roux.
- 4. Gradually whisk in the double cream and chicken stock, ensuring no lumps form. Let the sauce simmer for 5 minutes, stirring occasionally, until thickened.
- 5. Stir in the lemon zest, lemon juice, Parmesan cheese, and the remaining dried mixed herbs. Season with salt and black pepper to taste. If the sauce is too thick, add a splash of the reserved pasta water to loosen it.
- 6. Add the cooked spaghetti and sliced chicken to the skillet, tossing gently to coat everything in the creamy lemon-herb sauce. Cook for an additional 2 minutes to allow the flavors to meld.
- 7. Serve immediately, garnished with fresh parsley and an extra sprinkle of Parmesan cheese if desired.
