Instructions

  1. 1. Bring a large pot of salted water to a boil. Cook the spaghetti for 8-10 minutes, or until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.
  2. 2. While the spaghetti cooks, season the chicken breasts with salt, pepper, and 1 teaspoon of dried mixed herbs. Heat olive oil in a large skillet over medium heat and cook the chicken for 5-6 minutes on each side, or until golden brown and fully cooked. Remove from the pan and let rest for 5 minutes before slicing into thin strips.
  3. 3. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute, or until fragrant. Stir in the flour and cook for 1-2 minutes, creating a roux.
  4. 4. Gradually whisk in the double cream and chicken stock, ensuring no lumps form. Let the sauce simmer for 5 minutes, stirring occasionally, until thickened.
  5. 5. Stir in the lemon zest, lemon juice, Parmesan cheese, and the remaining dried mixed herbs. Season with salt and black pepper to taste. If the sauce is too thick, add a splash of the reserved pasta water to loosen it.
  6. 6. Add the cooked spaghetti and sliced chicken to the skillet, tossing gently to coat everything in the creamy lemon-herb sauce. Cook for an additional 2 minutes to allow the flavors to meld.
  7. 7. Serve immediately, garnished with fresh parsley and an extra sprinkle of Parmesan cheese if desired.
