Instructions

  1. 1. Preheat a large, heavy-bottomed pot or Dutch oven over medium heat. Add 2 tablespoons of olive oil and allow it to heat up.
  2. 2. Dice the onion and celery, and slice the carrots into rounds. Add these vegetables to the pot and sauté for 5-7 minutes until softened and lightly browned.
