Coconut Vegetable Stew Recipe

Ingredients

- 100 G East End Ground Coriander
- 60G Terre Exotique Cheeselovers Pepper, 60G
- 165 Ml Tropical Sun Coconut Milk Mini
- - Ktc Vegetable Oil
- - Chilli Powder Rajah
- 100 G Saras Turmeric Haldi Powder
- 100 G Trs Ground Cumin Jeera Powder
- - Natco Ground Cinnamon 100g
- 50G Top-Op Clove Powder 50g
- 200 Ml Yuzu & Honey Vinegar, 200Ml

Instructions
- 1. Heat 3 tablespoons of oil in a large saucepan over medium heat. Add 2 finely chopped onions and fry until they are just beginning to brown, about 5-7 minutes.
- 2. Add 2 minced garlic cloves, 2 finely chopped green chilies, and 1 teaspoon of ginger powder. Fry for 1 minute until fragrant.
- 3. Add 1/2 teaspoon chili powder, 1 teaspoon turmeric, 1 teaspoon ground cumin, 1 tablespoon ground coriander, 1/2 teaspoon ground cinnamon, 1/2 teaspoon ground clove, and 1 teaspoon pepper to the pan. Stir well to combine the spices and cook for 5 minutes, stirring occasionally.
- 4. Pour in 1 1/4 cups of coconut milk and stir to combine. The liquid should just cover the mixture; if it does not, add a little water. Add salt to taste.
- 5. Bring the mixture to a simmer, cover, and cook on low heat for about 1 1/2 hours, stirring occasionally, until the flavors are well combined.
- 6. Add 1/2 cup of vinegar and continue cooking uncovered for about 30 minutes, stirring occasionally, until the gravy has thickened.
- 7. Serve the stew hot with your choice of rice or bread.
