Instructions

  1. 1. Heat 3 tablespoons of oil in a large saucepan over medium heat. Add 2 finely chopped onions and fry until they are just beginning to brown, about 5-7 minutes.
  2. 2. Add 2 minced garlic cloves, 2 finely chopped green chilies, and 1 teaspoon of ginger powder. Fry for 1 minute until fragrant.
  3. 3. Add 1/2 teaspoon chili powder, 1 teaspoon turmeric, 1 teaspoon ground cumin, 1 tablespoon ground coriander, 1/2 teaspoon ground cinnamon, 1/2 teaspoon ground clove, and 1 teaspoon pepper to the pan. Stir well to combine the spices and cook for 5 minutes, stirring occasionally.
  4. 4. Pour in 1 1/4 cups of coconut milk and stir to combine. The liquid should just cover the mixture; if it does not, add a little water. Add salt to taste.
  5. 5. Bring the mixture to a simmer, cover, and cook on low heat for about 1 1/2 hours, stirring occasionally, until the flavors are well combined.
  6. 6. Add 1/2 cup of vinegar and continue cooking uncovered for about 30 minutes, stirring occasionally, until the gravy has thickened.
  7. 7. Serve the stew hot with your choice of rice or bread.
