Instructions
- 1. Heat 2 tablespoons of coconut oil in a large pot over medium heat.
- 2. Add 1 teaspoon of mustard seeds to the hot oil and let them crackle for about 30 seconds.
- 3. Finely chop one onion and add it to the pot. Sauté until the onions are soft and translucent, about 5 minutes.
- 4. Grate 1 tablespoon of ginger and finely chop 2-3 green chillies (adjust to your spice preference). Add them to the pot and sauté for another 2 minutes.
- 5. Add 8-10 curry leaves to the pot and stir well to release their aroma.
- 6. Stir in 1 teaspoon of turmeric powder and mix thoroughly to coat the onions and spices.
- 7. Pour in 400ml of coconut milk and bring the mixture to a gentle simmer.
- 8. Add 200g of prawns and 100g of shrimp to the pot. Stir gently to combine.
- 9. Season the stew with 1 teaspoon of salt (or to taste). Let the stew simmer for 10-12 minutes, allowing the prawns and shrimp to cook through and the flavors to meld.
- 10. Once the stew is cooked, garnish with 1 tablespoon of coriander leaf for a fresh, herby finish.
- 11. Serve the Coconut Milk Shrimp Stew hot with steamed rice or your preferred side dish.
