Ingredients

  • - Ginger - 100g
  • - Cofresh Whole Green Chilli 350g
  • 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
  • - Natco Black Mustard Seeds
  • 10 G Natco Curry Leaves 10g
  • 3 Pack Fresh Lime Pack Of 3
  • 400 Ml Ktc Coconut Milk 400Ml
  • 200G Picard - Breaded Shrimp
  • 250Ml Ktc Coconut Oil 250ml
  • 100 G Saras Turmeric Haldi Powder
  • 750 G Top-Op Table Salt Drums
  • 250G Garlic 250g
  • 1 Kg Tomatoes 1kg

Instructions

  1. 1. Heat 2 tablespoons of coconut oil in a large pot over medium heat.
  2. 2. Add 1 teaspoon of mustard seeds to the hot oil and let them crackle for about 30 seconds.
  3. 3. Finely chop one onion and add it to the pot. Sauté until the onions are soft and translucent, about 5 minutes.
  4. 4. Grate 1 tablespoon of ginger and finely chop 2-3 green chillies (adjust to your spice preference). Add them to the pot and sauté for another 2 minutes.
  5. 5. Add 8-10 curry leaves to the pot and stir well to release their aroma.
  6. 6. Stir in 1 teaspoon of turmeric powder and mix thoroughly to coat the onions and spices.
  7. 7. Pour in 400ml of coconut milk and bring the mixture to a gentle simmer.
  8. 8. Add 200g of prawns and 100g of shrimp to the pot. Stir gently to combine.
  9. 9. Season the stew with 1 teaspoon of salt (or to taste). Let the stew simmer for 10-12 minutes, allowing the prawns and shrimp to cook through and the flavors to meld.
  10. 10. Once the stew is cooked, garnish with 1 tablespoon of coriander leaf for a fresh, herby finish.
